
1 whole watermelon |
3⁄4 cup vodka |
6 fresh mint leaves |
1 1⁄2 tbsp white sugar, or to taste |
- Cut a thin slice off the rind at the flattest end of the watermelon to create a flat bottom. Be careful to only cut the rind and not expose any watermelon flesh. This step can be skipped, but it creates a stable base and makes the watermelon easier to work with.
- Cut the opposite end about 1/4 of the way down to expose the inside of the watermelon. Set the top aside. Scoop the inside of the watermelon out with an ice cream scoop or large spoon and set aside.
- Poke or cut a small hole 1/4 of the way up from the flat end of the watermelon big enough to fit the tap and install the tap.
- To the scooped out watermelon, add vodka, mint, and sugar. Puree using an immersion blender or transfer the mixture to a regular blender and process until completely liquid. Pour the cocktail back into the watermelon and put the cut off top back on.
- Using toothpicks or skewers, put 2 into either side of the watermelon poking through both the top and bottom sections to secure the lid. Serve the cocktail over ice.
- Note: The amounts in this recipe are based on a medium sized watermelon. If you are unsure about the amounts, start with 1/2 cup of vodka, then taste after blending and add more, if necessary. If the watermelon is very sweet, no sugar may be needed.
